【绍兴,2026年6月】 绍兴东山大观酒店欣然宣布,任命施海先生为酒店行政总厨,全面负责酒店餐饮出品及厨房团队管理工作。
施海先生深耕餐饮行业近三十载,师承中国烹饪协会副会长、中国名厨委员会主席高炳义大师,先后任职于希尔顿集团等多家高端国际酒店,行业履历丰厚。他曾荣膺“中国烹饪大师”“十大甬菜名厨”等称号,并斩获两岸国际名厨烹饪大赛个人金奖。
施海先生精于清雅浙菜,履新绍兴后,他深度寻访越地饮食文脉,致力于还原古越“饭稻羹鱼”的本真之味。他善取江鲜湖鲜与绍兴陈年黄酒,以糟、醉、霉、酱等传统技法,诠释绍兴菜香酥绵糯、原汁原味的独特风骨。施海先生表示:“黄酒浸润了整座绍兴城,每一道越式菜肴都承载着独属它的人文故事。我期待在东山大观的山水意境间,让食客真切感受千年越菜蕴藏的烟火温度与匠心诚意。”

[Shaoxing, June 2026] – Grand Dongshan is delighted to announce the appointment of Mr. Dylan Shi as Executive Chef, who will assume full responsibility for all culinary development, kitchen operations and team management across the hotel.
Boasting nearly 30 years of culinary experience, Mr. Shi trained under Mr. Gao Bingyi, Vice Chairman of the China Cuisine Association and Chairman of the Chinese Master Chefs Committee. He previously served in senior culinary roles at a host of luxury international hotels including Hilton Group outlets. His outstanding expertise has earned him prestigious honors: the title of Master of Chinese Cooking, Top Ten Masters of Ningbo Cuisine, and an individual Gold Award at the Cross-Strait International Chefs Cooking Competition.
Mr. Shi masters elegant Zhejiang cuisine. After taking up his new post in Shaoxing, he delved deep into the gastronomic heritage of the Yue region, committed to reviving the authentic ancient Yue philosophy of "Rice for meals, fish for broths". He skillfully uses seasonal river and lake delicacies and aged Shaoxing rice wine, adopting time-honored local crafts including fermented grain pickling, rice wine marinating, aged mold preservation and soy sauce simmering to interpret the unique charm of Shaoxing cuisine — crisp, soft and glutinous, retaining authentic natural flavors.
“Shaoxing is a city nourished by rice wine, and every Yue-style dish carries its exclusive cultural story,” Mr. Shi remarked. “Nestled amid the landscapes of Grand Dongshan, I hope to let diners feel the heartwarming earthly charm and sincere craftsmanship contained in thousand-year-old Yue cuisine.”
Grand Dongshan is tucked in Dongshan Lake Scenic Area, Shangyu District, adjacent to an ancient kiln site — the birthplace of Chinese celadon craftsmanship. This site was the seclusion retreat of Eastern Jin celebrity Xie An before his historic comeback to official prominence, and the birthplace of Xie Lingyun’s literary masterpiece Fu on Dwelling in the Mountains. The hotel’s signature Chinese restaurant “Shan” specializes in authentic local Shaoxing flavors. It selects distinctive local produce from Shaoxing, blending freshwater river catches from the water towns and delicate coastal seafood. Fruits, vegetables and other ingredients are sourced from the hotel’s self-operated Dongshan Ecological Farm, upholding an eco-conscious culinary ethos that prioritizes organic, unprocessed ingredients and preserves their inherent natural flavors.
